The marvelous Hôtel Le Saint Hubert, Luberon

There we are at last—time flies! It’s been two years since we first wanted to stay at Le Saint Hubert, a beautiful hotel, restaurant, and café in Saint-Saturnin-lès-Apt.

First of all, something I often remark on: I’m amazed by the younger generation returning to small towns and villages to create businesses—a hotel, a vineyard, a restaurant, and so on. These projects become local hubs of attraction, working with regional products and drawing attention to their surroundings. Chapeau!

Le Saint Hubert is located in the small village of Saint-Saturnin-lès-Apt, perched on a hill just 10 minutes from Gordes.

Lise Kvan (ex-Astrance in Paris) and her husband, Eric Montéléon, both trained at the Ferrandi cooking school in Paris. After years of kitchen experience, they worked and met at La Cuisine Paris, where they both taught.

They shared a vision: to rediscover the traditions of French agriculture and cook with local organic produce. This dream now comes alive through Le Saint Hubert.

The restaurant has a tiny terrace with an amazing view over the valley.
The food is delicious and refined without being pretentious. They work closely with local farmers, and the wine list is full of surprises. Luce Mathieu, the fantastic Maître d’, recommended a natural wine from the small estate Domaine de l’Or Vert in Lauris—elegant and fresh, especially if, like me, you enjoy Beaujolais-style wines with a complex yet lighter body.

Luce oversees the service team and ensures everything runs smoothly. After living in Corsica and Lyon, she returned to the Luberon and found her place at Le Saint Hubert.

As for Lise, the owner and chef, she and her husband fell in love with this hotel building, which they discovered in 2019. With years of hard work and the creative input of her sister, an interior designer, they transformed it into something truly special—a place city dwellers can only envy for its charm and way of life. The hotel has 6 rooms, we had the room n°6, generous in size, with the view on the place, you wake up with the gentle noises from the customers queuing at bakery downstairs.

The Luberon provides a steady flow of guests, with both local regulars and visitors from holiday homes. The location is perfectly surrounded by destinations like Avignon, Aix-en-Provence, Arles, and Marseille, to name just a few.

The food reflects this sense of place—fine, simple, and based on high-quality local products.

We started with a gazpacho made from market vegetables, as beautiful as it was tasty. The carpaccio of sea bream with orange and fennel salad was delicious, and Isaac loved his homemade pasta. For the mains: sea perch with red pesto, ratatouille, and olives—a wonderful mix of richness and Provençal flavors; and lamb with crunchy sliced potatoes, zucchini, and salsa verde—another hit.

The desserts were completely my style. We had one of each, and that was absolutely the right choice! The verbena parfait with peach coulis, the fig leaf posset, and the chocolate crémeux with confit oranges, sesame tuile, and olive oil brought the meal to a perfect close.

Thank you to the entire team for their flawless service and for giving us such a wonderful start to our trip.

Next to the restaurant is the café, which offers extra seating when the restaurant is full, a bar for enjoying a drink, and a coffee spot during the day. It gets especially busy on market days, as it sits right in the heart of the lively market.
